Foreword

Well if it was not for a friend I would not be writing this book. But when I sat down and thought about it. I started looking at my children and thinking what am I teaching them to be ready for the future? Well we cook as a family, everyone plays a part in the meals. In fact a large amount of these meals can be cooked by the kids with supervision.

Please understand that I am going to try to write this book in a way that has a bit of humour and I am going to try to aim it on the ideas that you will be having a helper. I want this book to offer the blessings that our family has come to know and that is Connection. You see in our home we sit at the table no TV, Phones, Radio or anything else, it is just us. That one moment in time that the magic of a family really shines. We talk, laugh, plan and share. I cannot think of a more magical time for our family that happens everyday.

I hope you enjoy the wonderful food that has been a big part of our lives as far back as I can remember. I might toss in a few that were nightmares for some humour. But in the end the bond that food has created through the years opens door, creates smiles, shows love and brings people together.

Read me First….

In Southern Cooking Gravy is king with many meals. It is so simple yet can be hard to master. In Australia it is called White Sauce but at the same time it is the same. But in Southern Cooking you use the fat that is supplied from the meat that way you avoid waste.

So here is some tips on making it. Use a fork or a whisk. Get a cup of flour and add it to the grease or butter slowly while stirring it into a ball and keep stirring until they break a part to small balls then add milk to the balls stirring to make into a thick sludge. Keep adding milk and stirring until it expands. Soon as you add the milk it will turn into a white sauce or gravy. Now we need to make it into a Southern Style simply add Salt and Pepper, more Pepper sets the mood of the white gravy.

Now we have Clear Gravy like Chicken, Beef, and Pork. These are simple to make are done with the “drippings” of the meat and adding water and corn flour to thicken it up. Once again bring the gravy to life by getting the best parts of the Drippings leave most of the colourless oil alone, you do need some but not to much.

Next we have RED EYE Gravy. This is not for the faint at heart and made for breakfast. First think is you are going to need some instant coffee grounds and Bacon Fat. First thing first in about ½ cup of warm water dissolve the coffee set it to the side and collect the bacon fat and add the coffee now you need to add corn flour to thicken it up. You use this over the top of Buttermilk Biscuits or Grits. It packs a punch so use it wisely.

Guacamole dip

8 ripe avocados
2 cloves of Garlic
2 Medium Size Tomatoes
1 Capsicum Green
1 Capsicum Red
1 Purple Onion
1 Habanero Pepper
1 bunch of Coriander (it is okay to remove if you think it taste like soap)
Salt
Dash of Turmeric

 

Cut and scrape out your avocados, put into a bowl and mash but leave a few small chunks.
Peel and mince the Garlic.
Chop up the tomatoes into small size chunks.
Dice the Capsicum.
Dice the Onion.
Mix the above in a bowl.
Add salt, not too much.
Dash of Turmeric and I mean a dash.

Okay the pepper; now you have a cheese grater and on one side it has big grates and on the other side it has small- the kind your kids love to use but you hate cleaning. Take the pepper and go to town using that small side. Scrape into the dip and mix well.

(If I find that you have ruined this beautiful dip with sour cream, I will find and I will shove your finger up your nose after you have done the pepper.) Enjoy! It is so yummy.

BTW add the salt to your taste buds.

Potato Gem Casserole (Tater Tot Casserole)

I have to my mum credit for this one. It was one of the few dishes she did very well and it was safe to eat.

1kg Bag Potato Gems (Tater Tots)
500 Beef Mince
1 Can of Campbell’s Mushroom Soup
1 Medium Onion
Cheese

Now this is really simple the size of the baking dish does not matter! Though a 9×9 does work for a family of 4. Upsize the pan for more people but you will need to up the ingredients to also match the size

What you do is spray the pan with oil and then line it with the Potato gems side by side until it is fully covered this is the first layer.

Then what you need in 500gm of Mince and then salt and pepper, Mix with one medium sized onion, it cook it up in bite size or smaller bits . Spread  as the second layer layer.

Then create a third layer like the first with potato gems leave no gaps.

Now bake in the oven at 180c until top layer of Gems is golden brown.

While that is cooking you will need one can of Campbell’s Mushroom Soup (don’t get food into any other brand it is not the same). Mix in separate bowl with one can of milk (I love whole milk). Once gems are golden brown remove from oven and pour soup over the top and replace in oven. Cook until you can see the soup is bubbling and slightly brown to the top once more. Remove from oven and top with shredded cheese then replace in oven until cheese is melted.

Once cheese is melted remove from oven and let rest for 5 minutes. a 9×9 pan serves 4 hungry people.

Philly Cheese Steak Sandwich

I really love this sandwich to me it is created by the gods of food just for people like me.

Steak
Garlic
Salt and Pepper
Turmeric
Olive Oil
1 or 2 Jalapenos sliced longwise into small strips
1 Red Capsicum
1 Green Capsicum
1 Bunch of Green Onions
Cheese

Plan this meal out! The Meat needs time to get dressed…

Get yourself some steak it does not need to be fancy because you are going to abuse it! Now on your cutting board place the steak and take two forks one in each hand having the tines pointed downward fork the living daylights out of this steak have no mercy. Once you are happy that this steak now has more holes in it that lace. Your are going to need a bowl to put the steak after it has been cut.

Now to cut the steak holding your SHARP knife blade at a 45 degree angle cut strips the size of your pinky nail in width and about as long as your hand is wide. Then place them in the bowl that you have already for this part.

Now you need to add the following to the bowl with the steak 1 TableSpoon of Garlic, 1 Teaspoon of Turmeric, 1 teaspoon of Salt and then Pepper and if you can handle it 1 Jalapeno – 2 if you can enjoy a little heat. Then Mix it all up and cover the bowl and let it sit in the fridge for 24 hours. It sucks to be on a tight budget sometimes.

While the meat is taking a rest in the fridge it is time to talk about Bread and Cheese. Let’s start off with a choice of Bread. Sandwich bread is not acceptable! You are going to need long rolls there is no issue with white, wholemeal, or birdseed style. But if you want a wonderful flavour find some sourdough rolls.

Cheese yummy cheese! Okay let’s get a little bit fancy choose three types of flavoured cheeses like Havarti, Provolone, and maybe something with some bush pepper. See how I am staying away from the standard cheddars. While Cheddar has a great flavor you need to mix it up to sing a bit more, this is a sandwich from the Gods – treat it as such.

Now one the day you are going to make your sandwich you will need the following done first 2 frying pans one to slow cook the Onions and Capsicans and if you want more heat add the Jalapenos from the meat bowl. while that is going you will need to cut the rolls long wise in half. Slice the cheeses that you have chosen in long strips but not to thick. In the roll you are going to lay one strip of each cheese, you will soon be placing the meat on top of them. Turn on the broiler part of your oven and preheat it. In the second pan you will need to heat the pan to high and you will be flash cooking the meat trying to keep it tender. Once you have cooked the meat add it to the Capsican and pepper mix. the stir it together and fill the bun to the brink of overflowing top with three slices of cheese and place in broiler to melt the cheese and if done right a slight golden brown top the the cheese. Be careful not to burn cheese or dry out the bread.

Serving suggestions:
1 Dill Pickle
1 Bag of Salt only Potato chips
Drink with ice
Napkin and a smile.

Baked Chimichanga

3 large Potatoes
Tortillas 12″
1 kg Beef Mince
Packet of Taco Seasoning
1 Red Onion
1 Can Refried Beans
1 Block of Cream Cheese
Cheddar Cheese

Wash and Stab and cook potatoes in Microwave until close to being done. When done Slice and dice them into SMALL cubes. Place in Bowl for later.
Dice Onion Place in Bowl for later.
Place can of refried beans and block of cream cheese in a small pot to heat slowly. once mixed and warm add in diced onion. Keep Warm
In a frying pan cook beef mince and with Packet of Taco Seasoning until browned but now dried out. Keep warm
Grate Cheddar Cheese

Place two Tortillas in the microwave side by side and warm for 30 seconds. Take one out, laying it flat on the cutting board. At the halfway line place a tablespoon smear of the Bean mixture. Then add 1-2 tablespoons of Beef Mince on top of the Bean mixture. Then add some Cheddar Cheese followed by a hand full of the potatoes.

Now come the folding fold the Tortilla in half then sliding the top half back rolling it around the ingredients, now take one side and fold it in closing a side,, repeat this on the other side as well. Now roll the folds on top of the bottom flap sealing it in the folds. Should look like a mini parcel.

Next on a baking sheet spray some oil and place the mini parcel that you have just created. Repeat the above step until you can fill the baking sheet.

In a preheated oven at 180 place in the oven for about 15-20 minutes or until golden brown.

Serving Suggestions:
2 on a plate topped with the Guacamole dip on top, a Dab of sour Cream and my Salsa mix. This will not go to waste and can be reheated. If you have extra Bean mix add it to the side of the dish with some of my Spanish Rice as well. If you want a small amount of finely shredded lettuce topped with a dash of balsamic vinegar. A meal fit for a King or a family get together. I promise if done right smiles will will be everywhere, even can I take some home will be heard.

Potato Bake

Chopped Ham or Bacon about 1/2 kg
Flour about a cup or two
2.5 Kg of potatoes (will vary on size of pan)
Milk
Salt and Pepper
Butter

In a baking dish or pan spray with cooking oil.

Wash and slice the potatoes. Layout the potato slices to form a layer. On top of that layer use a tablespoon and dust the potatoes with a healthy dusting of flour but be careful to much is a fine line and will result in clumps of flour. Then add some pepper but not to much. Then sprinkle the chopped ham or bacon. Repeat the same pattern until the dish / pan is full. Now pour milk (I love whole milk for this dish, it’s a flavor thing).

Cover and place in oven at 180c for about 30-40 minutes and then check to see if the top is cooked with a fork. Once done you can add Cheese to the top if your kids are cheese fanatics.

For a little fun….
Sprinkle in a little bit of garlic here and there.
When serving add a little bit of butter on top of Potato Bake serving on each plate. (oh yeah the butter helps) Salt and pepper to taste.
Add in a little bit of dried peppers in one layer (not advised for kids)

Fried Rice

3 Cups Uncooked Rice
4 Eggs
1 Capsicum
1 Medium Sized Purple Onion
Frozen or Fresh Peas
Ham

This is dead easy and you will be able to spend some quality time teaching your children how to make it.

Cook your rice with 4 cups of water to make the rice fluffy and enjoyable.

Dice up the ham your choice on how much ham you think would be good. I love ham so it gets a bit in the bowl.
Dice up your onion.
Dice up the Capsicum and warm up the peas (no one likes mushy peas in fried rice)

Make scrambled eggs with the four eggs and a dash of milk. Once done add in the diced ham and onion while the frying pan is still hot. Next add the Capsicum and the peas in the pan to get warm.

In a large bowl place your mixture with the rice. Best way to do it is one scoop from the rice and one scoop from the frying pan. Then mix and serve with Soy Sauce on the table.

*Fun stuff to add if you want a bit more adventure….

Potato Salad (awe yeah!!!!!)

5 Kg. Potatoes
4 Stalks of Celery with leaves
2 Eggs
Smoky Bacon
1 Medium Sized Purple Onion
500gm Thicken Cream

Wash and stab a fork into each potato. Then place 4-5 in your Microwave for about 12 minutes. Then check to see if the potatoes will allow you to stab them and they slide off on their own. If not cook some more….

Once you have cooked all of you potatoes cut them in halves long wise. Then cut in half again. This will make cutting them into chunks easier. now let them rest after being quartered. Once about 15-20 have passed cut them into bite size chunks.

Dice up the celery and finely chop the leaves.

Cook the bacon until semi crispy (I cheat! I use the sandwich press to make the bacon just right). Then cut into bite size pieces.

Dice up the onion

Mix all the above into a large bowl while pouring Thickened cream on top of mixture. Add salt and pepper to taste. Then place mix well and chill in fridge for a few hour before eating.

Hidden Cookie

So you don’t wanna eat your dinner but you want a cookie, okay……Muhahahaha

250gm Semi Sweet Chocolate Chips
Flour
Butter
Sugar
Carrots (Finely Grated)
Chopped Chick Peas

Taco Salad

2 Medium Tomatoes
1/2 kg Mince
1 Packet of Taco Seasoning
1 Head of Lettuce
1 Bag of Plain Corn chips
2 Tomatoes
1 Cup of Salsa
250g of  Sour Cream or Greek Yogurt

First cook the mince in a frying pan with the packet of Taco Seasoning mix well. Once done drain excess fat and let cool.

Dice the Tomatoes, Shred the head of lettuce. Then in a large bowl you will need to place the Diced Tomatoes and the head of lettuce. Then add the Mince mixture, the cup of Salsa, and the Sour Cream or Yogurt and mix. Then take the bag of corn chips and smash them a bit to make them bite size. Now pour the corn chips in the bowl with all the other ingredients then mix it up and serve.

Serving suggestion:

Get a couple of Limes and cut them into quarters. Squeeze one lime quarter into a glass and then place ice to the top of the glass with the lime quarter. Fill the glass with Lemonade (sprite) this makes a great refreshing drink during the meal.

Zucchini Dream 

Zucchini Marrow (the bigger the better)
HOT salami
3 cups uncooked Rice
Rosemary
Garlic
Cheese

Cook your rice with 1 and 1/3 cups of water to make your rice fluffy

Cut the Zucchini long ways in half, then scoop out the seeds and bits

Line the remaining shell of each side with the Hot Salami

Mix the cooked rice with the Rosemary, Salt, Pepper and Garlic

Place the rice Mixture in the shells until heaped above the Zucchini Shell by 1cm

Cover with Foil

Back at 200c for 30 minutes or until Zucchini is cooked

Remove the foil top with cheese and place back in oven until cheese is melted

Serve

Corn Chowder

Good Soup goes a long long way. Here is a wonderful suggestion invite someone for Soup and Bread. Everyone will be richer for the time you have spent planning and enjoying making it.

2-3 Cans of Creamed Corn
1 Can of Whole Corn
Whole Milk 2-3 Lt
1 Tbsp Salt and Pepper
1 Medium Onion, Chopped
1 kg Ham or Bacon (Smoked), Chopped or Cubed

In a good size Soup pan add all of the above ingredients there is no order to this. Cover and let it come to a very slow boil you don’t want to burn the soup. Let it cook for a while about 1 hour and then check the salt level add more if needed. This is a hearty style soup it is meant to be thick and full of love.

Serving suggestion:
Bread and Butter, this is going to make a wonderful meal.

1 Red Onion

Unorthodox Veggie Soup

1 Red Onion, Chopped
2 Ham Hocks
3-4 Medium Potatoes, Chopped
4 Stalks of Celery with Leaves, Chopped
Soup Mix with Barley
Salt and Pepper
2 Large Carrots, Chopped
1 Turnip, Chopped
2 Parsnips , Chopped
1 Bunch of Parsley, Chopped
3 Tbsp Olive Oil
Water

In a soup pot add the following Oil, Onion then you need to cook the onion until transparent. Then you are going to add the Turnip and Parsnips and on Medium High cook for about 3 Minutes to sear the Turnips and Parsnips.

Then add the Ham Hocks and enough water to cover them. Reduce the heat to just a slow rolling boil. Let that cook for about 30 minutes. Check your Ham Hocks to see if the meat is easy to take off. If you are able to strip off all the meat and chop the meat into bite sized pieces and replace into pot with the Carrots, Potatoes, Celery, 1 Bag of Soup Mix and Parsley.

Let the soup simmer with a lid for about 2 hours then check the soup mix to see if the mix is eatable. Add salt and pepper to taste.

Hay Stacks

Some recipes are as magical as the person who taught you. This is one of them, little helps can do a lot of it!

3 Cups of Uncooked rice
3 Stalks of Chopped Celery NO leaves
1/2 kg Smoky Bacon
1/2 a Roast Chicken
Chicken Gravy
Cheese

This is FUN! Cook the rice with 4 cups of water to get fluffy rice. Chop up the Celery and set it to the side. Next if you have a sandwich press cook the bacon to crispy stage and then set it to the side to chop into small bits when cooled. Next something fun for the kids, take the Chicken Breast and teach the kids to take a fork and shred it. Okay I can be bothered to make chicken gravy on the fly. I buy the the powder stuff (I know cheater). So make some up if you have some.

Okay time to make the Hay Stack! You will not find a needle in this one. So based on who the person is and how much they each. Place some rice on the plate, followed by the pulled apart chicken, then the Celery, then the Gravy, then the Bacon and lastly the Cheese. Then watch the smiles begin! Don’t be afraid to mix it up, get sloppy be a kid again.

BBQ Turkey

Bath
1 cups of Rock Salt
2 cups Soy Sauce
Rosemary (1 small branch)
Turmeric
1 Medium Red Onion (chopped to hell)
2 Tbsp Garlic

First things first you are going to need a big soup pot. Then once you have it add all of the above ingredients plus ¼ of the pot with water stir to dissolve the salt. Give it a small taste and see if it is big time salty.
Next you need to add the Turkey into the pot and cover it with water and then cover the pot. Place it in the refrigerator for 12-24 hours. Trust me it has to be done!

Okay so the next day cooking time! You are going to need some Apple wood, I bet you are wondering where can you get some of that. Simple an apple tree you are going to need a bit of it Green and dead branches. But if you don’t want to waste time and effort go get some hickory chips from your local BBQ store. If you have a gas BBQ you will need a small metal tray to light the chips or sticks on fire no one wants to ruin the BBQ. I don’t care how you light it on fire but you need to and it needs to smoulder don’t use lighter fluid it will ruin the turkey!

Once the chips are on fire light your BBQ and place the Turkey on it without the pot and water. But Keep the Bath! You are going to need it. You need to cover the BBQ to keep the heat in and cook it slow the chips need to do their work. But not to slow as to risk food poisoning. If the lid of you BBQ will not close you foil. In about ½ hour check the chips add more if needed. The idea is to make a crap load of smoke. Worry the neighbours it is fun! Cook the turkey like this for about 1 ½ hours then remove the turkey to the over at 190c keep it covered for ½ hour. Now you are going to add some of the bath to the turkey to keep it moist (LOL people hate that word). Now you are going to try to turn the drumstick one of legs if you can’t turn it cover and cook for another ½ hour and bath again and check the leg again. Repeat every half hour until you can turn the bone.. Once you can do that your turkey is 95% done. We are going to make it shine. Take it out and pour Honey over the top of it and then place it back in the oven for about ½ hour then turn off the oven and let fit vent and rest the turkey a bit so the glaze looks like heaven.

Now you can pour out the bath you don’t need it anymore.

Serving suggestions:

Hungry people because it is not going to last and people are going to let you know how amazing it was and even some might say can I take some home say NO. Tuckey sandwiches with Cranberry and Brie oh Heaven.
But really have some mashed potatoes, fresh green beans done in a pan with butter, lemon grass, Garlic and lightly salted. Some Gravy made from the turkey’s oven drippings will not go wrong. Some buttermilk biscuits will make a meal from heaven. You can even do some Fresh Shitake Mushrooms broiled under grill with Butter salt and a small bit of Parmesan cheese. Gosh I am putting on Weight just writing this.

Fried Gyozas

1kg Ground Beef or Turkey
2 Packets of Wanton Wraps
4 stocks of Celery
1 Tbsp of Turmeric
½ cup of Soy Sauce
1 Tbsp Garlic
1 tsp of Pepper
1 Medium Onion
Water
Cooking Oil

Mix everything together except the Won Ton wraps. The idea is to make sure it is all mixed well.

Now you will need a bowl of warm water. Now open the pack of Won Ton wraps and take one wrap in the palm of your have and dip your finger into the water and wet all sides of the wrap. Now place a ball of the meat mixture about the size of a 20 cent piece in the center of the wrap and then fold one corner to the other making a triangle. Press out the air as you press all the sides together.

In a frying pan add the oil and heat it until the wooden spoon test says it is ready. Wooden spoon test is to take a wooden spoon and turn it upside down and put it in the oil, once it starts to boil the oil is ready to use.

Place Won Tons that you have made in with enough room not to touch other ones. Let them cook until they have turned a golden brown. Then remove from the oil and serve.

Serve with Fried Rice.

Hush Puppies

3 cups self-rising cornmeal
1 cup self-rising flour
1 teaspoon baking soda
1 teaspoon salt
1 medium purple onion, chopped
1 Jalapeño, chopped
Small hand full of Shredded Cheese
2 cup buttermilk
2 eggs, lightly beaten

You are going to fry these so got a pot or a pan and fill it about half way about 5-7cm in depth. Then heat it up to the wooden spoon test, if you don’t know that turn a wooden spoon upside down in the oil and when it starts to boil your oil is ready.

In a bowl Mix everything no order because that would make sense. Then taking two soup spoons you are going to scoop out the mix and make kind of a ball and drop it into the oil until golden brown then pull them out to cool down enough to eat.

Serving suggestion: A lot next to some black eyed peas and Ham Hocks or Gumbo…….

Fried Chicken 

1kg  Chicken (Drumsticks, Thighs, Breasts and Wings)
4 cups Flour
Salt and Pepper
2 tsp Paprika
1 Tbsp Garlic Powder
2 tsp Turmeric
2 tsp Onion Powder
Chilli Powder (dash)

Whole Milk
Peanut Oil

You need to have a frying pan with oil in it and done to the wooden spoon test. In case you did not know, oil when at the right temperature for cooking is best when the top of the spoon starts to boil.

In a large Bowl add the following Flour, Salt, Pepper, Garlic Powder, Onion Powder, Turmeric, and Chilli Powder

Next we are going to double batter the meat. Bath the meat in the Milk. Then place it in the flour and let it sit for a minute and repeat. Now this should be a goopie mess. Once you have done this add it to the oil for cooking. Don’t try to cook it to fast this is where the mistakes are made.

Chicken Fried Steak

Oh this is where my Heaven lies. Want to find a way into my heart……

Okay get some chuck steak nothing fancy because you are going to attack it. First thing is to take the steak out and take two fork turned upside down one in each hand and stab the crap out of the steak. It needs to have a lot of holes in it. Good way to get some anger out.

Next thing you need to do is have a dish with Flour in it and a dish with milk in it. In the dish with the Flour you need to put Salt and Pepper in it as well. Mix the flour up a little bit so the salt and pepper are moved through it evenly. Use about 2 tsp of both and 2 cups of flour.

You need to have a frying pan with oil in it and done to the wooden spoon test. In case you did not know, oil when at the right temperature for cooking is best when the top of the spoon starts to boil.

Next we are going to double batter the meat. Bath the meat in the Milk. Then place it in the flour and let it sit for a minute and repeat. Now this should be a goopie mess. Once you have done this add it to the oil for cooking. Once the batter becomes a golden brown take it out. It will not take to long.

Make a white sauce and add pepper and salt to it. Pour it over the Chicken Fried Steak. If you made Mashed Potatoes pour some on that as well.

Serving suggestions: Mashed Potatoes and a green salad

Meatloaf

1kg Ground beef mince
500g Ground pork sausage
2 Stalks of Celery (Chopped including leaves)
1/2 Cup Soy Sauce
1 Egg
Garlic
1 Medium sized Onion (Diced)
3 slices of day old Bread (needs to be broken up into small bits)
2 tsp Salt and Pepper
1 Can of Diced Tomatoes or pasta sauce

I love this recipe served with Mashed potatoes and veggies I am in heaven!

In a bowl mix the following 1 Egg, 1/2 cup of Soy Sauce, Beef Mince, Onion, Salt and Pepper. Mix well then add the bread mic again.

Now in a loaf pan (you know the one’s bread is made in) place the mixture. level it out and create a indent in the center and the sides running from one end to the other. It does not need to be to deep but you are making a couple of hills.

In a Preheated oven set at 180c cook for 1/2 hour. Then remove and top with Can of Tomatoes or Pasta sauce but not to much. Increase the temp to 200c and cook until a skin is formed on the meat loaf the sauce. Remove and serve.

Serving suggestion:

Mashed Potatoes and Mixed Veggies

Turkey Pasty 

1 kg Ground Turkey
Frozen Peas
2 Carrots
2 Stalks of Celery including leaves
Soy Sauce
Turmeric
Paprika

Hot Wings (this is NOT rocket science)
Wait this is just like Fried Chicken, well you are right but wait until you get to the end…..

1kg  Chicken Wings and Drum Sticks
4 cups Flour
Salt and Pepper
2 tsp Paprika
1 Tbsp Garlic Powder
2 tsp Turmeric
2 tsp Onion Powder
2 Tbsp Chilli Powder
3 Tbsp of Chilli oil
5 Habanero Peppers
1 cup Honey
1 cup of Water
1 Lime

Whole Milk
Peanut Oil

Take the Chicken and place it in a bowl with 1 cup of water. Now you need to take 2 of the Habanero peppers, Chop and Mash them then mix the mash with the water and Chicken. Squeeze the lime until you cannot get any more juice out of it. Add the juice to the water as well. Now you need cover it, to let the chicken set over night in the refrigerator.  When ready to cook remove from the refrigerator and drain the water. Let the chicken rest in the refrigerator while you get everything else ready.

Now lets crank up the heat you are going to take all 3 Habanero Peppers and scrap out the seeds and set them to the side. Then you are going to mash up the peppers then add the honey. Once the wings are out of the oil use a pastry brush coat the wings with the Honey and Chillies followed by sprinkling of the seeds.

If you feel the need to step up the heat replace the Habanero peppers with Ghost Peppers. Warning these are going to be really HOT! Be careful not everyone can handle extreme heat.

Oyster Beef

Beef Steak
Bunch of Green Onions
2 Carrots
Water Chestnuts
3 Cups of uncooked rice
Capsicum Peppers
2 Tbsp Sesame Seeds
1 tsp Fresh Garlic

Taking your Steak cut it into strips about the length of your finger, then place them in a bowl and pour a jar of Oyster sauce on top of it to coat the beef, mix well. Then let it sit covered in the refrigerator for about 4-5 hours.

Cook your rice with 4 cups of water to get fluffy rice. While your rice is cooking you need to drain the Water Chestnuts. Then Cut you Capsicum Peppers, Green Onions, Carrots length wise.

Add one 1 tsp of Garlic and 2 Tbsp of Sesame Seeds to the beef that has been soaking in the Oyster sauce. In a Wok or a frying pan  on Medium Heat add 3 Tbsp of Olive oil then add the Beef soaked in the oyster sauce until lightly browned then add the Vegetables. You want to heat the Veggies not cook them to much to keep the crisp of them.

On a plate put some rice that matches the persons ability yo enjoy then top it with the contents of the Wok or Frying pan as a topping.

Sausage Rolls

1 kg Beef Mince
500g Pork Sausage Mince
1/2 tsp Thyme
1 tsp Paprika
2 Tbsp Salt and Pepper
2 tsp Rosemary
1 Tbsp Garlic
2 tsp Turmeric
Puff pastry
1 Egg (mixed in a small bowl)

Okay here we have it finger food that all kids love.

In a mixing bowl add the Beef Mince, Pork Sausage, Thyme, Turmeric, Garlic, Salt and Pepper mix like mad.

Lay out your puff pastry sheets flat and cut in half. Now you are going to take and make logs of the mixture and place it in the middle of the half of the Pastry sheet, then fold it over and press a fork in the seem to lock it together.

Whisk the egg and use a pastry brush it on top of the roll you just made and then cut into bit sized bits (your choice in width). Place them on a lined baking sheet with a small gap between each one. then place it in the preheated oven at 190c until the pastry is golden Brown.

Black Eyed Peas and Ham Hocks

This is for my dad and a friend Karl, you would never catch me eating this ever again, lol.

2 Smoked Ham Hocks
Garlic
1 KG of Black Eyed Peas
1 Medium Red Onion
Salt

Chicken Chow Mien 

4 Stalks of Celery with Leaves, Chopped to the leaves, Leaves finely chopped
Garlic
2 Chicken Breasts
Rosemary fresh is best
1 cup Soy Sauce
Salt and Pepper
Mushrooms
3 Cups of Uncooked Rice
Corn Flour
Fried Noodles

First and Dice the Chicken Breasts, Then Brown them off in a large sized Frying pan with Salt and Pepper. DO NOT CLEAN AFTER USE. Once Browned reduce heat Add about Half  of the pan with Water to simmer. Then add the Rosemary, Garlic, Soy Sauce, Mushrooms and Celery.  Let simmer for 15 minutes.

In a glass add half of it with Cold Water and then 3-4 Tbsp of Corn Flour. Then Mix the water and corn flour well just before adding it to the pan. This is a thickening agent raise your pan temperature until you have a SLOW boil if it is not mixture is not thick enough repeat this step. Small steps because you can always add more but you cannot take it away.

Add Salt and a bit more Soy Sauce until you are happy with flavour, once again you can add but not take away. My kids like it on the table in case they want to add more.

Cook your rice with 4 cups of water to make it fluffy.

Measure out the rice per person and add the Mixture and Garnish with the Fried Noodles.

My Salsa Dance (Warning this not for the faint of Heart)

The heat can be dialled back by use of different peppers

1 Can of Diced tomatoes
1 Cup of Frozen Corn
3 Habanero Peppers (Grated)
2 Jalapeno Peppers (Chopped)
2 Fresh Tomatoes (Diced)
1 Large Red Onion (Chopped)
1 Lime
1 small Lemon
1 Tbsp Garlic

Cut and squeeze the lemon and lime Juice kept to the side.

In a pot add the following 1 can of diced tomatoes and Garlic heat slowly to marry the flavours. Then let cool.

In a bowl add Corn, Tomatoes, Onion, Habanero Peppers, Jalapeno Peppers, Lime Juice, Lemon Juice, Tomato and garlic sauce. Cover and let sit in the refrigerator for 24 hours before use.

Hamburger Gravy

½ kg of Beef Mince
Flour
Milk
Salt and Pepper
Toast

The Mince need to be cooked in a pan with salt and pepper. Once you are done with the mince scoot it off the side and use the grease and make a white sauce with flour and milk. Then mix in the mince give it a stir and add salt and pepper to taste.

Growing up we used to have toast and put the gravy over the top with a green salad on the side. But as I grew up we started using Potatoes.

Pizza!

Basic Crust
5 cups of Flour
2 1/2 cups water
2 Tbsp of Fast acting Yeast
2 Tbsp of Sugar

Now if you have a mixer this is the best way to do it

Put all 5 cups of flour in the mixer bowl in the center poke a hole and put the 1 tsp of salt then cover the whole (salt kills yeast) and add the 2 Tbsp Olive oil.

In a glass put 1 cup of warm water and 3 Tbsp of Sugar then mix. Now add the 2 Tbsp of yeast and mix it up and let it sit. While it is sitting put one cup of cold water in the mixing bowl. Once the glass with the yeast begins to develop a good amount of foam on the top of the mixture pour it into the mixing bowl as well..

Now turn on the mixer to slow and once the mix starts to combine then you can increase the speed. Sometimes the mix is a bit to dry you can add in a 1/2 cup of water water but make sure not to add too much as it might make the mixture sloppy, you want to create a ball of dough. Once you have a ball of dough remove the mixing bowl and then cover it with a clean towel placing it in a warm place until it doubles in size.

Spanish Rice

3 cups of uncooked rice
1 Can of Diced tomatoes
1 Green Capsican
1 Yellow Capsican
1 Red Capsican
1 Cup of Salsa

Bean and Bacon Soup

2 Ham hocks
3 cans of Butter beans
1 large Yellow Onion (Chopped)
Salt you are going to need this
2 Bay Leaves

This soup is a wonderful winter soup. It fills up people and easy to make.

Place your two Ham Hocks in a large soup pot and fill the water to the point that they are covered and add your 3 cans of Butter beans. Then add your chopped onion. Cover the pot and let it cook on Medium High to get a rolling boil going. Let it cook for about an hour and then check to see if the Ham Hocks are starting to look like the meat is ready to be removed. If it is then place it on the chopping board and remove the meat and most of the fat. At the same time if you have a bar mixer you will need to have some fun in the pot, grind those little bean until you cannot find any whole. Add the meat back in and let it simmer until the soup begins to thicken up a bit don’t cover if it is not thick enough you will need to let simmer down a bit. Then add salt to taste.

Grinder

When I was growing up in California this was the King of sandwiches. Grinders are simple and filling for a meal that does not require cooking. We used to sit and watch a movie enjoying Grinders.

1 head of Lettuce
5 Tomatoes
Whole Egg Mayonnaise
1 Medium Onion
Shaved Ham or Roast Beef
Swiss Cheese or Pepper Jack if you can find it
Salt and Pepper
Loaves of French Bread

Okay I hope you are ready for how simple these are to make. Once you do it the sandwich stores will never compare.

Okay first thing is to Shred the lettuce smaller is better place it in a large bowl. Now you are going to get busy with the salt and pepper you want it a bit on the salty sided. and mix this up.

Next slice the Tomatoes thin is the best way to go. Now do the same to the onion, but this time try to make the onion almost paper thin slices.

Here we go!! Slice the French Loaf long wise in half (having a top and bottom). Spread the whole egg Mayonnaise on the top and bottom. Now on the bottom side you are going to make layers add the meat first, Followed by the lettuce mix don’t be skimpy on it, next the onion and the tomatoes, Last if you need it add the slices of Cheese. Then fold the top down and slice the loaf in quarters.

Serving suggestions:

Salt and Vinegar potato chips are a perfect match!

Breadsticks

I know it is the same basic recipe as the Pizza Crust. But if you want you kids to enjoy cooking this is a great one to get them hooked on. Plus it is a lot of fun making it.

5 cups of Flour
2 1/2 cups water

Now comes the fun with clean hands and a clean flat bench space you are going to add just a small bit of plain flour to the bench. Move the flour around with your hands to cover the area you are going to work with the dough.

You need to make 3 arm length, finger width lines of dough. So how we do it is to take a hand full of the dough and roll it in your hands (like you did with play dough). Once you have all three made you need to plat or braid them. Once you do that you are going to place it in a baking tray sprayed with oil. If you have enough dough do it again and add those as well to the sheet.

Next you are going to make some Garlic Butter. Use the 2 Tbsp of Garlic and a half a cube of butter. Put it in the Microwave until melted. Using a pastry brush spread it on top of the breadsticks you have made. Once the Garlic Butter is spread lightly salt the top of the bread sticks. then place in a preheated oven at 180c until the breadsticks turn golden brown which should take about 20 minutes but keep your eyes on it.

Zucchini Bread

This has to be one of the Robins family favourites!

Mix together
3 Eggs
2 Cups Sugar
1 Cup of Olive Oil
2 Cups Grated Zucchini
1 tsp Vanilla

Give it a good mix, then slowly add the following while mixing.

3 cups of Flour
1 tsp Salt
1 tsp Baking Soda
2 tsp Cinnamon
½ tsp Nutmeg
½ tsp Baking Powder

Mix well and avoid lumps….

Pour into 2 Bread pans and bake at 190c for 1 hour then test.

If you want to make it a real winner add Macadamia Nut and Semi Sweet Chocolate chips. Even try sprinkling  sugar over the top just before cooking.

Easy Tuna Noodle Casserole

This is a kids dish to cook with supervision.

2 Boxes of Kraft Mac and Cheese
1 Large Tin
1 Cup of frozen Corn
1 Cup of Grated Cheese

Okay make the Kraft Mac and Cheese as the box says, then add the Tuna and Corn. Once mixed up put it in a 9×9 baking pan and add you 1 cup of Cheese to the top and bake at 190c until top is melted and a bit of colour on it.

Serve it with a green salad mum and dad will be very impressed.

Mushroom Rice and Chicken

Milk
2 cans of Campbell’s Mushroom Soup
1 kg Boned Chicken Thigh
2 Cups uncooked rice
Salt and Pepper

In a large baking dish all 2 cups of rice. Next add two cans of Campbell’s Mushroom soup with 2 cans of Milk. Save time and the need to wash dishes use the empty cans of Mushroom soup as a measuring device. Using a whisk mix the ingredients that are in the baking dish.

Now add 1 kg of boned chicken thighs. Place them around the baking dish and sprinkle some salt and pepper on the chicken. Place in a preheated over at 200c until the rices is cooked it might be done in about 45 minutes. At about the 30 min mark I stir the dish to make sure the rice is getting cooked.

Serving Suggestions:

A nice tossed salad or even a Cesar salad will add a wonderful zest to the dish.

Australian Collard Greens

 

Due to the fact that finding Collard Greens in Australia is near impossible this is my modified version of this wonderful Southern Dish.

 

1kg Bok chow, Chopped

1kg Baby Spinach Leaves , Chopped

Ham Hock
Large Onion, Chopped
Bacon Fat you are going to need about a half cup
Water
Garlic
Vinegar
2 Jalapeños, Chopped
2 Tbsp of Olive oil

 

In a soup pot, you will need to fist slow cook the onion in the Bacon Fat and Olive oil until the onion is translucent and the fat is dissolved. Next put the Ham Hock in the pot and cover with water. Next put in the Garlic and two Jalapeños make sure to get the seeds. You need to let that cook on Medium until the ham is ready to be taken off the bone. Let is cook for about a Half an Hour more then add your Greens to it. Let it cook slowly until the greens are getting softer (you don’t want mush). Now drain off the water and save it for a soup, don’t waste it.

 

Serve a splash of Vinegar over the top of the greens and mix well.  Pair this up with the Fried Chicken, Mashed Potatoes and Biscuits then good old Cornel Sanders can take a leap.

Ranch Dressing
1 cup buttermilk,
1 cup mayonnaise,
3 tbsp sour cream,
3 tsp chopped parsley,
2 tsp chopped chives
2 tsp white wine vinegar or lemon juice,
1 tsp Garlic
½ tsp salt,
½ tsp ground pepper

Put it all in a bowl and mix well……..Yummie!

Top Secret Steak

This is my special steak recipe, for years I would not give this out. Even my dad did not have it.

First thing you need is a deep dish. To put some T-bone steaks. Now don’t be cheap and get the ones from you supermarket. Spend a few extra dollars and get some really thick cuts from a Butcher, the thicker the better.

Next in a bowl you need to add the following 1 cup Soy Sauce, 1 Cup Worcestershire Sauce, 1 Tbps Garlic, ¼ cup olive oil, 1 Diced Medium Onion, and 1 Tbsp Black Pepper. Mix well and pour over steaks then place in Refrigerator for 12 hours.

When cooking on the grill rest the steaks on some thick cut onion slices after separating the rings.

Cook to you desired style but not Charcoal because it ruins the flavours of the sauce.

Okay kids you’re going to do it all. Please wash your hands!!!


Sharp Knife License!

Okay kids, Mum and Dad need to help at this point. Because blood on the cheese is groose, ewwww! Before you confuse a finger for a link of sausage. Before you can start mum and dad need to make sure you are safe with really sharp knives. So listen to them and remember being safe is the first thing you need to remember. When in doubt stop set the knife down and ask for help. Mum and Dad will be glad you did.
Lesson 1, Knives are not light sabres or toys Mum and Dad keep them sharp for a reason and that is to cut food, not people.

Lesson 2, When you carry the knife keep it pointed down towards the floor and the sharp edge away from your body. Never hold it in front of you if you drop it…..OUCH it is in your foot. Always to the side and the sharp edge away from you.

Lesson 3, Always use a cutting board! If you want to see Mum or Dad blow their top off their head it will happen if you forget.

Lesson 4, No games ever! From the knife block or drawer walk slow and strait to the cutting board. Once there use the knife and put it were Mum and Dad say it is safe and away from little kids.

Lesson 5, Be safe this is the most important part of your knife lessons. NEVER cut towards yourself. This is not a game always cut from your left to your right if you are right handed, or right to the left if you are left handed. Keep your fingers well away from the knife. We don’t want to call you 4 Finger Freddy.

Well here we are if Mum and Dad say you know these rules and they have watched you do it several times the right way I think you might just have earned you Knife License. But remember Mum and Dad can take it away at anytime so please be safe!

 

Keep it Clean

Okay lets say it……Vomit, Tossing your cookies, Spew, Puke, blowing chunks, and even hugging the toilet. No one really likes to do it. You know what makes it worse when at the same time it is coming out of you mouth it is coming out of your bum the same way.. Yup it is not very fun at all. So how do we avoid this…. Well we need to keep the area where we are cooking at VERY clean. We also need to keep some food apart until they are cooked. So let me help you know what to do.

If it is Meat, Greasy, grimy, slimy, or filled with goo it has to stay away from things that are green, crisp, cheese or even fresh. They have to be prepared on different cutting boards and use different tools like knives, spoons, and even forks. Though once they are cooked it is safe to have them next to each other.

But there was something you could have even forgotten and that is the best tools you have. Your hands have to be clean at all times. You need to use soap and warm water. Sing Happy Birthday while you are washing your hands to make sure they are really clean. Now if you blow your nose, pick your nose, wipe your nose you need to do it some where away from the food and wash your hands again. I don’t want boogers in my dinner, yuck!

Oh and last but still very important if you use the toilet WASH YOUR HANDS. If you do these rules you won’t be hurling up your dinner.

Kids Turn!

Alright kids now it is your turn to do something on your own. Time to surprise and impress. So the first thing we need to make sure that you have you sharp knife license. What this means is that mum and dad trust you handle a sharp knife on your own. If not what we need is a kitchen hand that will do what you say. This could be very fun, you get to be the boss. But always remember mum and dad are the big bosses even though they might be your helper.

So if you need help be kind and ask for the help. What you need to do is get mum or dad to buy some Dip at the store. You will need 3 different types. I like to have Spring Onion as one of mine but your family might like others or you can make a real quick and simple one follow these instructions.

In a bowl add ½ cup of whole egg mayonnaise, ¼ cup milk, 1 tsp of garlic, and  ½ tsp of pepper  then mix it well no lumps. This makes a good and simple dip.

Here is what we are going to need to when dad or mum does the shopping ask them two get the following….

Black Olives
Cherry Tomatoes
Cucumber x2
Broccoli
Cauliflower
Capsicum (green)
Carrots
Bunch of Celery
Cheese (not grated)
Water Crackers
Shaved Ham
Shaved Silverside
Balsamic Vinegar
Large Platter

Okay here we come to the fun part. First thing fist is to cut the Cucumber into chips style mum will know how to do this if you need help. Then place all the Cucumber chips in a bowl and sprinkle the Balsamic Vinegar over the top of them and mix them around so they all get covered evenly. Now cover the bowl with some cling wrap or a lid and place it in the refrigerator for a little bit.

Next we need to make Carrot sticks and Celery sticks. This is not to hard and will need a sharp knife or your helper to do it. Mum can instruct you if you need to have help. Now that you have done that you will need to place them in to a bowl with enough water to cover them and put the bowl in the Refrigerator.

Next we are going to cut the Broccoli and Cauliflowers into finger food style. So what you have to do is make them into little trees. I think you can let your imagination work a little here. There is a big hint it is finger food easy to grab with your fingers. Next is the Capsicum you need to cut it from top to bottom and make sticks out of this as well. Place these in a bowl with water you do not need to pout it into the refrigerator.

Time to cut the cheese (he he he I said cut the cheese). But okay time to be the writer again. You need to cut the cheese into slices big enough to fit on to one of the crackers.

Now we are going to set it up to get ready for dinner you need to get your platter out and in the middle place one of the dips you have chosen or the one you made. Next you are going to place the cheese in one part of the platter in a pile.
Next we are going to drain the Carrot, Celery, and Capsicum sticks. Then place a pile next to the cheese. We are going to fill the platter and so next we need the olives, then the Ham. Next we need to add our little trees, we made you need to drain these as well before adding those. Then add the silverside, followed by the chips you made as well. Then the last thing is the crackers, we need to fill this platter so if you have not done so make more.

Sometime dinner or more about the fun then the food, but only sometimes. Okay now we need the family to come to the table. Tell your little brother to wash his hands with soap because it is all finger food and you might not want to know what he was playing with outside. Place your platter in the middle of the table and get some small platers out and a couple of tea spoons for the dip if you want..

Do something nice let mum go first and fill her plate. But if you live with dad let him go first. Good luck and have fun!

Poor Mans Milkshake

Let me give you a little history behind this drink. My dad was a great man who when ever things were going wrong always had someway of knowing what to give me to make me smile and the world always seemed just that little bit brighter. I broke my arm and what did my dad make me, this drink.

1 Large Glass
Milk
Vanilla extract
1 Tbsp Sugar

This is really simple to make. In the large glass add two drops of Vanilla extract with the 1 Tbsp sugar. Next you are going to add the milk (whole milk tastes better). With a fork you need to stir the glass fast to make a bit of bubbles at the top of it and serve / drink it.. The world will get better with a smile on your face!

El Polo Loco Nachos

1 Roast Chicken
2 Bags of Corn chips
1 750 g shredded Cheese
1 Oven safe platter or a Baking Sheet
1 Can of Refried Beans
1 Onion, Chopped
2 Green Onions, Chopped
1 block of Cream Cheese
1 Green Capsicum, Chopped
1 Packet of Taco Seasoning
2 Tbsp Olive Oil
Sour Cream
Guacamole
Salsa

Okay kids this one might need mum and dad to help but you are going to have a wonderful meal for a movie night!

First thing you need to do it to make the Refried Beans. In a small pot with a lid you are going to add the following 1 block of Cream Cheese and turn the heat of the pan to low to start to melt the Cream Cheese once it is about ¾ down you need to add a pinch of salt and empty the can of Refried Beans into the pot. Stir to mix it all up and then add in the onion and let it stay warm with the lid on it.

Next have mum or dad make the Guacamole and Salsa from the recipe I gave them in this book.

Next you will need a Frying pan. Put the 2 Tbsp of Olive oil in it and the Packet of Taco Seasoning. Next you need to take the breast meat off the Roast Chicken. Place them on the cutting board and using a fork pull apart the breast meat (mum can help you). Then put the meat in the frying pan with the Taco Seasoning and Olive Oil. Now place the frying pan on medium heat and stir the meat around to put the Seasoning all over it. Keep it warm after the ingredients are mixed up.

You need to preheat the over to 180c. On your Platter or Baking Sheet spoon some of your Refried Beans not to much from one end to the other end. Now add some chips on top of that. Next add some Cheese, Some Chicken, Green Onion, and Capsicum. Now add another layer of Chips, Cheese, Some Chicken, Green Onion, and Capsicum if you have enough chips and other ingredients do it again! Once you have done this place it in the oven until the cheese is melted evenly.

Serving Suggestions:

Put 3 bowls out for
Sour Cream
Guacamole
Salsa

About me…..hmm I am short, I am a writer, I have 7 kids (all of them are awesome!), I love good food, I love seeing people happy with full bellies and talking to each other, I love hearing from my kids this is the best meal ever!
